Eliza's Vegans

My friend Eliza is on a mission to motivate her friends to eat less meat and more vegetarian and vegan dishes. She doesn't have a blog of her own so I've accumalated the recipes she posts on facebook here so I - or you - can come back to them when we want!

Tasty Tabouli Salad



1 box of Casbah Tabouli
Olive oil
1/2 toasted pine nuts
few tbs of sliced almonds
1 1/2 yellow/red/green/orange pepper (your choice or mixture of each)
1/3 red onion
1/2 cup a dried cranberries
1/2 cup broccoli
cilantro (to taste)
1/2 cup cherry tomatoes
1/2 cup of chopped kale
1/2 cup of chopped carrots
1 jalapeno

1. Cook Tabouli according to package directions and let cool
2. Chop all veggies and stir with Tabouli
3. Mix all ingredients and add salt and pepper according to taste



Very Vegan Chilli 
* feeds about 5 large servings




1 large can diced tomatoes
1 large can whole tomatoes
1 or 2 packet of chili powder
1 package of meatless ground beef
1 can of chickpeas (or other choice of beans)
1 can of red kidney beans (or you can mix and match whatever beans you like such as pinto, black beans,etc
4 celery stalks
1 white onion
1/2 red pepper
1/2 yellow pepper
1/2 orange pepper (or just 1.5 of your fave)
6-8 mushrooms
2-3 jalapenos (or to your taste)
salt, pepper, montreal steak spice, garlic powder (to taste)

1. dump the canned tomatoes in large pot on med heat
2. cut all veggies and put in pot
3. brown the veggie beef
4. mix chilli powder packet, put a lid on it and simmer for 30 min
5. dump in the canned beans, corn and the veggie beef
6. simmer for 10 more min and let stand until ready to eat
7. season to taste



Broccoli, Pine nut and Basil Pasta



3-4 cups of broccoli (cut to liking)
Pasta of your choice
1/2 cup of toasted pine nuts
1/2 cup of fresh basil
3 tbsp of vegan 'butter'
2 cups of cherry tomatoes
2 tbs of lemon juice
3 cloves of garlic
pepper, salt, chilli pepper flakes to taste
olive oil
1. cook past according to directions
2, sauté broccoli until firm but cooked with olive oil
3. add all ingredients (except basil) in large pot and stir well under low heat.
4. add fresh basil
